Ingredients
- 360 g pasta
- 400 g radicchio (red chicory), sliced into thin strips
- 1 garlic clove
- 100 g diced bacon
- 3 tablespoons extra virgin olive oil
- Salt and black pepper, to taste
- 4 tablespoons cooking cream
- 100 ml white wine
- Grated Grana Padano cheese
Instructions
Prepare the Sauce
Heat the olive oil in a large pan over medium heat.
Add the whole garlic clove and diced bacon, cooking until lightly golden.
Add the sliced radicchio and cook until it begins to soften.
Add the Wine
Pour in the white wine and let it evaporate over medium heat.
Cook the Pasta
Meanwhile, bring a large pot of salted water to a boil.
Cook the pasta according to package instructions until al dente.
Finish the Sauce
Remove the garlic clove from the pan.
Add the cooking cream, season with salt and pepper, and stir until the sauce becomes creamy.
Combine and Serve
Drain the pasta and add it to the sauce, tossing well to coat.
Serve hot with a generous sprinkle of grated Grana Padano cheese.
