Ingredients
- 400 g spaghetti
- 1 kg fresh clams
- 400 g tomatoes, chopped
- 1 clove garlic
- Fresh parsley, chopped
- Extra virgin olive oil
- Salt, to taste
Instructions
Clean the Clams
Rinse the clams thoroughly and soak them in salted water for a few hours to remove any sand.
Rinse again before cooking.
Cook the Clams
Place the clams in a pot and cook over medium heat until they open.
Remove the clams from their shells if desired and strain the cooking liquid to remove impurities.
Prepare the Sauce
In a pan, heat a drizzle of olive oil and lightly sauté the garlic.
Add the chopped tomatoes and a little of the clam cooking liquid.
Cook for about 5 minutes, then add the clams and mix well.
Cook the Pasta
Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
Drain the pasta.
Combine and Serve
Toss the spaghetti with the clam sauce.
Sprinkle with freshly chopped parsley and serve hot.
